Launch center of preserving Vietnam traditional cuisine

Vietnam Tourism Association has just launched the Vietnam Culinary Conservation, Research and Development Center in Hanoi to preserve and promote the quintessence of every dish and drink while elevating Vietnamese cuisine into an important attraction of tourism.

Recently, Vietnamese cuisine has been repeatedly praised by foreign journalists and experts, step by step asserting its position in the international area. With the aims of preserving and promoting the quintessence of every dish and drink, contributing to elevating Vietnamese cuisine level, on November 24, Vietnam Tourism Association has decided to establish the Vietnam Culinary Conservation, Research and Development Center- CRDC.
In terms of organization structure, the Center has a Culinary Advisory Council and four professional departments: the Vietnamese Cuisine Collection Department, Vietnamese Cuisine Nutrition Research Department, Cuisine Development Department and Communication - External Relation Department.
In the coming time, the Center will focus on building and organizing research topics for some typical Vietnamese food and drink to introduce and promote Vietnam tourism such as nutrition research of Vietnamese cuisine under the motto of "Delicious and Healthy", making standard of dishes for national events as well as selecting food for tourism promotion and attraction by segment. In addition, the Center will conduct survey, set up and collect information about the food and drink of the country, restore, maintain and develop the lost food and drink, traditional food festivals, traditional craft villages as well as promoting the professionalization of human resources in Vietnam.
At the same time, to develop and improve Vietnamese chefs' skills, introduce the community and the world of Vietnamese food and cooking recipe, the Center also provides training courses and contest to determine the cooking and baking skills and techniques, creating favorable conditions for Vietnamese cooks to work abroad. In addition, the Center organizes events, fairs and exhibition to promote Vietnamese cuisines in domestic and abroad, closely connect with tour operators, coordinate with localities to build and deploy food tour routes, visit raw material areas, provide cooking courses while coordinating with the authorities to honor artisans, experts and chefs who contribute to the Vietnamese cuisine.
Vietnam Culinary Conservation, Research and Development Center was established under Decision No. 62 / QD-HHDLVN of the Vietnam Tourism Association. The center is located at No.18 Truong Dinh Street (Ward 6, District 3, Ho Chi Minh City) and is licensed by the Ministry of Science and Technology.
Currently, the center is developing a website in both Vietnamese and English, aiming to provide culinary information for Vietnamese and foreign visitors and build a comprehensive view of Vietnamese cuisine. The website is expected to be put into operation in August 2017.
